Easy Peasy Healthy Puddings

Here are three quick and easy puddings that are good for you too!

Healthy banana ice cream Preparation time: 10 mins no cook Serves 4

Ingredients

4 ripe bananas

Banana, chopped into 3cm chunks, then frozen

2 tbsp milk

1 tbsp peanut butter

Add these or other flavours you like, for example ginger.

1 tsp ground cinnamon

1 tbsp dark chocolate, grated

1 tbsp flaked almonds

Method

Tip the frozen bananas and almond milk into a blender. Blend together to create a smooth consistency. Add the peanut butter and cinnamon, and blend again. Taste and add more cinnamon, if you like.

Transfer to a freezer-proof container and freeze for 1 hr.

Take out of the freezer and serve with grated chocolate and flaked almonds sprinkled over.

Instant Berry banana slush

Preparation time: 5 mins Serves 2

A low-fat berry iced dessert. Sling all your ingredients into a blender and blitz for a refreshing, healthy treat in minutes

Ingredients

2 ripe bananas

Banana

200g frozen berry mix (blackberries, raspberries and currants)

Method

Slice the bananas into a bowl and add the frozen berry mix. Blitz with a stick blender to make a slushy ice and serve straight away in two glasses with spoons.

Vegan Chocolate Banana Ice Cream

Preparation time: 5 mins no cook Serves 2

Ingredients

1 frozen banana

1 tsp cocoa powder

200g frozen berry mix (blackberries, raspberries and currants)

Method

In a blender, blitz the frozen banana with the cocoa powder until smooth. Eat straight away.

This week’s Top Tip

If you’re hungry before you go to bed and you want a snack try the quick banana ice cream. It won’t give you a big sugar hit which could keep you awake longer and the banana and milk have something called tryptophan in them which helps you sleep.
